Paydos 2018

Continuing the Alonso del Yerro family's strong bond with the land, Paydos combines all the Toro region's virtues; it's intense and profound, but as always happens with this house's wines, it's also extremely fine and elegant. The old bush vines, planted in gravel and clay soils, enjoy a superb setting in which to grow at an altitude of more than 700 metres. It rains very little and there's an extreme contrast in day and night temperatures, both very favourable for obtaining a wine of magnificent quality. After a good harvesting by hand and a maceration lasting 24 hours, the wine undergoes malolactic fermentation and subsequent ageing for 15 months in French oak barrels. In appearance it exhibits boldness, an intense dark Picota cherry colour. On the nose, the ripe black fruit, liquorice, cocoa and blue flowers all define it. On the palate it's full-bodied and profound, as it should be, but it also boasts polished tannins and fine spicy touches. Balsamic hints emerge from its impressive volume.
