The unique design of the blue and white-striped bottle of the Vallformosa Coupage Blue Fin Reserva Brut cava is reminiscent of nautical decorations. This surprising design also gives a clue as to some of its ideal food pairings. Developed with advice from the chef Carles Abellán and sommeliers Antonio Lopo and Sergi Figueras, Mestres Coupage Blue Fin pays homage to the fishermen, chefs and traders who work with bluefin tuna and prepare it for some of the top restaurants in the world. A cava specifically developed for the world of gastronomy and gourmet food, it is particularly recommended for pairing with wild bluefin tuna (sushi, tartare, smoked tuna) although it also goes well with any kind of oily fish or cheese.
Vallformosa Coupage Blue Fin is produced using Xarel·lo, Macabeo, and Parellada grapes. Part of the base wine used to make the cava spends five months in wooden barrels. The second fermentation in the bottle is carried out with cork stoppers and ages on its lees for over 18 months. The final result is an intense, lively, and complex cava with an electrifying citric palate, notes of spices and a long finish. This cava is a must to try!
