Obtained exclusively from the best Sangiovese grapes from our vineyards, dried for a few months on rush mats in the drying rack, the Occhio di Pernice is aged for a decade in kegs, small 50-liter oak barrels, and owes much of its special character to the mother, a centenary indigenous yeast, carefully guarded by Avignonesi. Dense and mysterious, the Occhio di Pernice reveals a complex and enveloping bouquet with aromas of dates, dried figs, gingerbread, sweet spices and candied citrus. In the mouth it is sweet and spicy with hints of liquid caramel, candied berries and plum jam. A wine that surprises with every sip, the aftertaste is incredibly long.
