One of the mythical champagnes of the aristocracy, an extremely fine wine, balanced and delicate, and the one that best defines the Maison Bollinger style. 80% of production accrues from rigorously selected grapes from Champagne Grands crus and Premiers crus that belong to the winery in the main (2/3), which is not only quite remarkable in the denomination but also the raison d’être and the quality assurance guarantee of this wine year after year.
Bollinger Special Cuvée is a blend of wines from different vintages, but principally from the current vintage, to which small quantities from previous years are added as well as a small but significant dosage of reserve wine (5-10%) which ensures constancy of blending, using reserve wines that Bollinger keeps especially, then ageing the produce from each vineyard separately, with a cork stopper and in Magnum bottles in their magnificent cellars. The Special Cuvée only contains between 7 and 9 g of added sugar per litre.
Matured for a minimum of 36 months before disgorgement. After disgorging, it rests for at least 3 months before being released.
