El Tiempo Que Nos Une 2023 is a red wine produced by Bodega Cerrón, a family winery located in Fuente-Álamo, Albacete, in the Jumilla PDO. This single varietal Monastrell comes from pre-phylloxera vineyards with an average age of 70 years old, planted in calcareous soils at an altitude between 850 and 900 metres above sea level. Harvesting is done by hand, carefully selecting the grapes. Fermentation is spontaneous, using 40% of whole grapes in cement vats that simulate traditional wine presses. After a gentle pressing, the wine undergoes malolactic fermentation and is aged for 10 to 12 months in 10,000-litre French oak vats. When tasted, this wine has an intense red colour. On the nose, it offers aromas of ripe black fruits such as blackcurrants and plums, accompanied by subtle notes of black pepper and sweet spices. On the palate, it is fresh and fluid, with a firm tannin structure and an elegant balsamic presence. It is a wine that reflects the Mediterranean character of the Monastrell grape and the uniqueness of its terroir.
