Located in Sanlúcar de Barrameda, where it is considered quite an institution, Bodegas Hidalgo La Gitana is currently run by the fifth generation of the Hidalgo family and possesses more than 200 hectares of vineyards on the Balbaina and Miraflores estates, the best in the Jerez District. The winery, barely 300 metres from the mouth of the River Guadalquivir, benefits from a maritime influence for maturing the wines, which leaves its mark upon the ageing and special characteristics of their range of Manzanillas, Amontillados and Olorosos.
The 'pasada' Manzanilla is a matured Manzanilla, which is closer in style to an Amontillado, more profound and generous in aromas than a fresh Manzanilla, whether classed as normal or 'en rama'. Manzanilla Pasada Pastrana is one of the most classic and highly-acclaimed by those with exacting palates. Matured for more than 12 years in century-old American oak casks, its notable aromas are pungent, salty and redolent of dried fruits and nuts, whilst proving complex, powerful and well-balanced on the palate. Very dry, with a delicate, elegant and persistent flavour. Ideal for aperitifs, tapas and starters like pâtés, assorted cheese boards, or even grilled oily fish.
